Locust Bean Gum
Locust Bean Gum is produced from the fruit of the Carob Tree (Ceratonia Siliqua). We stock standard grades and we also have the ability to supply a clarified LBG.
LBG is an ideal stabiliser for ice cream, continental style meat products and soft cheeses. It is freeze-thaw stable and imparts good mouthfeel to frozen products. When used in food manufacture LBG has a lubricating effect on product and allows for better dispersion and free flowing of finished product.
Our LBG can be blended with Carrageenan, Guar and Xanthan to produce a customised stabiliser and viscosifier for nearly all commercial food uses.
